Every year for Hanukkah I give these latkes a go! I like to add flour in addition to the starch from the potatoes because I like my potato pancakes CRISPY! So good!
Kind of like an Eggs Benedict, but not. No ham, but avocado spread. No hollandaise, just the yolk. Yes poached egg because your body needs that good cholesterol!
