A Family Latke


Every year for Hanukkah I give these latkes a go! I like to add flour in addition to the starch from the potatoes because I like my potato pancakes CRISPY! So good!

Yummy Traditional Latkes


  • 3 potatoes
  • 1/2 white onion
  • 2 eggs
  • 1/2 cup of flour
  • Salt & Pepper
  • 1/4 c of canola oil

First grate potatoes, and once they have been shredded, place a handful in some cheesecloth and squeeze out the remaining moisture into a small bowl. Drain the remaining liquid but keep the starch and throw that into the potato shreds.

Grate onion for fine shreds and add that to potato shreds. Crack two eggs into the potato shreds. Add salt & pepper to potato shreds. Mix well until egg is distributed evenly.

Put a sauce pan with the canola oil on high and make little patties with latke mixture. When oil is hot enough, place mixture in and fry until golden brown. Flip to fry the other side, too. Once both sides are nice and crispy, take out and place on paper towels to drain oil.

Get some applesauce & sour cream and enjoy!
